Well-fermented kimchi isn't just spicy—it brings acidity, sweetness, and an incredible depth of umami that pairs beautifully with seafood. Instead of competing with the saffron and smoked paprika, it brightens the entire dish and makes every bite a little more exciting.

Ingredients


Seafood

  • 6 large shrimp (140g), peeled and deveined

  • 8 mussels, cleaned

  • 5 calamari rings (70g)


Rice

  • 4 tbsp olive oil

  • 2 small onions, finely diced (330g)

  • 1 red bell pepper, diced (165g)

  • 4 garlic cloves, minced (17g)

  • 200g well-fermented kimchi, chopped

  • 250g tomato purée

  • 300g Spanish paella rice (Bomba or Calasparra)

  • 4 tsp sweet smoked paprika

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • ½ tsp saffron threads, soaked in 50g warm water

  • 400ml warm fish stock (or chicken stock)

  • 73g frozen peas

  • Salt and freshly ground black pepper


Garnish

  • 2 tbsp chopped fresh parsley

  • Lemon wedges, for serving

How to Make Kimchi Paella


1. Sear the Seafood

Heat the olive oil in a large paella pan over medium-high heat. Sear the shrimp for about 1 minute per side until lightly golden, then transfer to a plate. Add the calamari and cook for another minute before removing. The seafood will finish cooking later, so avoid overcooking it at this stage.


2. Build the Flavor Base

Reduce the heat to medium. Add the diced onion and garlic to the same pan and sauté for 5–6 minutes until soft and fragrant.


3. Cook the Kimchi

Add the chopped kimchi and cook for 2–3 minutes, allowing it to caramelize slightly. Stir in the diced red bell pepper and continue cooking until it begins to soften.


4. Add the Tomatoes and Spices

Pour in the tomato purée and cook until slightly thickened. Add the smoked paprika, garlic powder, and onion powder, stirring well to coat the vegetables and release the spices' aroma.


5. Add the Stock

Pour in the warm fish stock, followed by the saffron and its soaking liquid. Bring everything to a gentle simmer.


6. Cook the Rice

Add the paella rice, spreading it evenly across the pan. Season with salt and freshly ground black pepper.

From this point on, do not stir the rice.

Allow it to simmer uncovered over medium heat until most of the liquid has been absorbed and the rice is almost tender.


7. Finish the Paella

Arrange the shrimp, calamari, and mussels over the rice. Scatter the peas across the top.

Continue cooking for about 5 minutes, or until the mussels have opened, the shrimp are fully cooked, and the rice has absorbed the remaining liquid.

For an even crispier socarrat, increase the heat for the final minute, listening for a gentle crackling sound—but be careful not to burn the rice.


8. Garnish and Serve

Remove from the heat and let the paella rest for 5 minutes.

Sprinkle with freshly chopped parsley and serve with plenty of lemon wedges for squeezing over each portion.

  • Use Well-Fermented Kimchi

Older kimchi has a deeper acidity and more developed umami, making it the perfect match for seafood and saffron.

  • Warm Your Stock

Adding warm stock keeps the cooking temperature consistent, helping the rice cook evenly while developing the perfect texture.

  • Don't Stir the Rice

Unlike risotto, paella should be left undisturbed once the rice has been added. This is the secret to achieving the crispy, caramelized socarrat at the bottom of the pan.

  • Add Seafood at the End

Shrimp and calamari cook very quickly. Adding them during the final few minutes keeps them tender and juicy instead of rubbery.

  • Can I use frozen seafood?

Yes. Thaw it completely and pat it dry before cooking to ensure the seafood sears properly instead of steaming.


  • What's the best rice for paella?

Traditional Spanish Bomba or Calasparra rice works best because it absorbs plenty of flavor while keeping its shape.


  • Can I make this spicier?

I wouldn't recommend it. Making it much spicier can overpower the delicate sweetness of the seafood and throw off the balance of the dish. If you'd like a little more warmth and color, add a bit more sweet paprika powder instead. The goal is to enhance the flavors, not mask them.


  • What can I serve with Kimchi Seafood Paella?

A simple green salad or a chilled glass of Sangria or Tinto de Verano pair beautifully with this dish.
